Behind the scenes at our favourite restaurants


Head Chef Simon Henbury took us behind the pass of Jamie’s Fifteen to follow their roast chicken sharing plate’s journey to the table.
The baby gem cooks on the plancha with the help of some chicken gravy.
Simon prepares the cooked chicken for the sharing plate. 
Plating up the chicken bits, skin, herbs, roast gem on the mise en place.
Hot section set for service.
Shanese putting sardines in for roasting.
Dressing the plate: chicken again, and garlic chips.
Chicken again! Cotswold Springfield chicken, grilled lettuce, anchovy, and parmesan.
